I am ready for a great day! By the way I have amaz I am ready for a great day! By the way I have amazing students, most of them have really stepped up their game for distance learning. I know it is not easy, but this challenge has really prepared them well for the future. I believe that they are going to be much more adaptable to life’s changes and challenges because of this experience!

#optifast mug cake Made with an egg and a banana #optifast mug cake 

Made with an egg and a banana from the US transition week 1. This is a work in progress for me - maybe too sweet with the artificial sweetener. But it was still good.

Directions:

1. Mash a banana. 
2. Beat in 1 egg. (Next time I am going to use just the egg white.)
3. Add 1 tbsp of unsweetened cocoa powder.
4. Optional, add 1-2 tsp sugar free sweetener and/or a few drops of vanilla.
5. Microwave for 2 minutes on high - more or less depending on strength of your microwave.
6. Top with 5 calories of fat free Reddi-wip, if desired.
